Very good-dry, refreshing with green apple and citrus flavors. The wines are made using traditional methods, a second fermentation, followed by maturation on battens for at least 12 months. The grapes are harvested at the beginning of the opening of the harvest ban, timing where the grape are just before full maturity, good acidity is found in the vivacity and fruitiness of the wine.

Domaine Ste. Michelle (all flavors) – $13.99

Sparkling wine is a wonderful yet often overlooked accompaniment to food. Bright acidity and effervescence cleanses the palate, while the delicate flavors complement a wide array of dishes. Brut pairs very well with Japanese cuisine, my favorite is with sashimi. Sip with bagels and lox for a relaxing weekend brunch. Domaine Ste Michelle sparkling winemaker Rick Casqueiro’s first exposure to wine was from his grandfather, who had emigrated from Lisbon, Portugal to the San Francisco Bay area in the early 1900’s.
